My first rabbit
Tonight was the first time I had ever eaten rabbit, and I was pretty nervous. But man! It was good.
I also made a salad with: roasted, diced beets; shitake mushrooms; crumbled goat cheese; a homemade honey balsamic reduction dressing; homemade croutons. Not bad for a Wednesday night, eh?
